I also find that the more scientific the subject, the more likely there are going to be conspiracy theories around it. I wonder why that is?

I'd guess that the subjects that people find interesting tend to involve subtle reasoning and sometimes unintuitive results. Both are fertile grounds for misunderstanding and outright denial.
