Akira, Battle Angel Alita, anything by Studio Ghibli (Spirited Away and Grave of the Fireflies especially)...

1) Anything by Miyasaki, he rules
2) Perfect Blue
3) Akira
4) Grave of the Fireflies
5) Hikaru No Go
6) Serial Experiments Lain

These are the ones there's a possibility you haven't seen. I know you know about FMA, Bebop, Champloo, etc., so no sense in wasting space on those.

Berserk is great...if you don't mind all the homoerotic behavior between the main characters...I mean seriously, I couldn't get past the third episode because there was so much gay innuendo in it.

As for good animes right now-- Bleach is on episode 120ish and still going strong, also I started a new fansubbed anime called Death Note which is simply amazing.

Then there's Gantz, Full Metal Panic, Fafner, so many...

Bleach is turning into one giant filler, even the manga, which makes the Anime actually okay. The Anime sidetracked for about 2 years when they caught up with the manga. Hopefully they'll skip most of the manga filler stuff and just move on to the interesting stuff. To be fair, Bleach is not bad, but there just hasn't been anything really meaningful happening for a long time.

Death Note follows a trend very close to Hikaru No Go, probably because it's illustrated by the same guy. However it hits its peak way earlier than HNG. Of course, if the Anime guys are smart, they'd replace the ending with something original like the live action movies did, because I don't think anyone actually liked the ending in the manga...

The Bastard! Series is worth taking a look at if you like insanely evil and powerful sorcerer types being forced to live in a small child's body and be forced into combating other evil-type people.

It's got good action, and it's quite funny at times.

I don't know about that one you linked to. I think it's pirated, but whatever. I've got a 3-disc pirated Hong Kong set (bad subs, really dark in some places, but cheap) and the 5-disc set they released here a year or two ago (good subs, better transfer, but more expensive).

Hmm, is there not an official dub? I dont mind subs, but was this anime ever released in the US and done properly?

We watched Black Blood Brothers, which was pretty good. It also was a good dub.
