Not surprisingly, you can call plays and even draw "hot routes" on the Gamepad for Madden. Pretty much the functionality you would expect and is a no-brainer:

FIFA allows you to actually hold up the pad and pick your spot to aim and shoot. IGN calls it awkward, which I imagine it would be at the beginning in particular:
